Because CPUs run multiple task to allow the system operates. It may not dominate. For systems like the Apple M series that have a unified memory beats intel CPUs because they are not unified.
GPUs would continue to dominate still all CPU can fully be unified. If you have over 256GB RAM unified with your CPU, and a high clock speed and bus rate you don’t need much of a GPU again, expect your rendering dedicated things.
